Florence Heresztyn has taken over her share of the family domaine and, aided by her Champenois husband Simon Mazzini, the quality since 2012 has been transformed. They believe in retaining a proportion of the stems during fermentation to give added aroma and structure. All the wines are aged in small oak barrels for 18 months, drink beautifully when young but have the richness and concentration to age magnificently. This is 100% whole bunch and aged in 30% new French oak, and a high proportion of old vines. This estate has made has made huge strides in recent years and is now one of the top estates in Gevrey, with a consistently high quality range
