Fuelled by a relentless pursuit of perfection, he gathered inspiration everywhere – from the exotic Eastern spices unloading on the docklands of London to his journeys to the far
corners of Europe.
At times, however, inspiration would come from a source closer to home. In his notes from 1839 we find ‘Lovage’ – a recipe showcasing a balanced and savoury flavour derived from the finest local English ingredients.
